I could do cheese enchiladas with the chili con carne topping with rice and beans everyday :)

My MIL's enchiladas. She makes her own sauce with dried peppers from New Mexico.

    We call her enchiladas, "Momchiladas".

I'd go with either a nice Salmon and veggies meal, a Churrascos medium rare steak dinner, or maybe even some Schnitzel, red cabbage, German fried potatoes and Bratwurst. lol

    Default Last Meal?

I would go with my mom's chicken enchiladas verdes. All the toppings (queso fresco, cilantro, crema). Mexican rice with a light mix of corn as the side. A bowl of her albondigas soup. Ice cold Dr. Pepper.

I go back to my two roots: (1) Roasted Cabrito with rice and beans with Corn Tortillas, Guacamole, Habanero Salsa and Roasted Onions w/Lime. (2) Sauerbraten with Carrots and Onions and Red Cabbage with several Potato Dumplings (Kartoffelkloesse). My two favorite meals, I could eat either for life.
